this week's eats

One thing I have noticed about quarantine is the satisfaction that comes with making (and eating) your own food. You can make an experience out of each meal if you take the time to intentionally plate your food, pour yourself a glass of something refreshing, sit down, and eat without distraction.
Quarantine can give us the opportunity to reintroduce some leisurely mindful eating into our once quick-paced, hasty lives. Where once I rushed during breakfast, worked during lunch, and worried about the homework I had to do during dinner, I now have the ability to sit and relax as I enjoy meals. Even greater, I get to practice making the meals as well!
Here are some of this past week's eats!
Sunday Morning Açai Bowl with Iced Coffee

This was so good. I blended a packet of frozen acai, frozen strawberries and bananas, and almond milk for the base. For toppings, I added Justin's honey peanut butter, coconut, chia seeds, raspberries, and blueberries. Simple and sweet for a sunny Sunday.
As for the coffee, there is more to come on my new latte creating obsession.
Avocado Toast and Strawberries

A.K.A. the most basic breakfast ever. But trust me, there's a reason. Avocado toast can be made so many different ways, and I tried to switch things up this time! I made my usual smashed avocado with salt and pepper on top of Dave's Killer Bread. Then, I added some almonds and drizzled with olive oil. SO good. Another classic is to top with a fried egg. (My favorite in all honesty.)
PB+J Homemade Granola Breakfast Bars

Got this recipe from The Kitchen Twins' cookbook "The Teen Kitchen." I will link it here. I HIGHLY suggest this to anyone who usually grabs a granola bar for their early morning snack. This was the sheet of them before I cut them into squares. Once I did cut them up and put them in the fridge, they were gone so fast (courtesy of my brother)! If they are Wilson Webster certified, they have to be good!
Kodiak Cakes with Fruit and Honey

When I walked downstairs to see my brother making these, I got so excited. However, I got even more excited when I tried one and discovered the hints of chocolate scattered throughout the pancake. Kodiak Cakes are delicious and protein packed, AND they can be pancakes or waffles...Really a win-win. I topped them with fruit and honey because that's my favorite way to top a pancake.

Indoor S'mores

This was one of the most incredible desserts. Serious thank you to the Mesler Family. If you like s'mores, you MUST try this. I will link a recipe here; however, it is VERY easy. All you need is a proper dish, chocolate, graham crackers, and marshmallows. Oh and an oven, duh. Perfect for those days when you just don't feel like making a fire or when the rain stops summer night plans.
P.S. Try adding cinnamon to the top. It's a game changer.
The Classic Bowl

At my house, we have "Bowl Nights" a lot. It's just so easy and has limitless combinations. In my opinion, bowls must have some sort of avocado, sweet potatoes, a protein (like chicken or eggs), and something to go on top. I used my mom's homemade salad dressing. This was mine from from the past week, but they always vary. That's why bowls never get old.
